With the festive season just a few days away, it is time to get the cooking, ON (if you early birds have not done, so already.) This meal idea came from a sheer eagerness to find a Rice alternative.
Let’s be honest, Quinoa is amazing, but not really as hearty Rice.
I absolutely L-O-V-E this meal idea, as it provides you with a well completely balanced, source of Protein (Quinoa & Lentils), and is filling yet light.
The satisfaction of eating Rice, without the heavy feel.
Introducing… “Raw Carrot Rice ” (grated Carrots) – Genius
The moisture of the Carrots, compliment the Quinoa Lentil mix well.
Vegan Meal Ideas…
Protein Brunch served with Raw Carrot Rice
Serves : 4 as a side or 2 as a main dish.
2 Large Carrot
1/2 Cup Lentils
1/2 Cup Quinoa
Water for Cooking
1/2 tbsp Coconut Oil
1/2 tsp Cumin Powder
Few drops of Soy Sauce
1/2 tsp Turmeric Powder
Pinch of desired Seasonings
Chopping Board | Knife | 2 Saucepan | Serving Bowl | Tablespoon | Teaspoon | Sieve | Wooden Spoon | Frying Pan
Cooking Time: 15 Minutes Preparation Time: 10 Minutes
Start by placing your Quinoa on the hob set at medium to high; with ½ L Water (make sure there is plenty of water to cook, you can always sieve the remaining water out). In your other saucepan, place Lentils with enough Water on similar settings as Quinoa, (medium to high). Allow these to cook for approximately 12 – 15 minutes (ensuring the are not too soft, you’d want them to be firm).
Prepare “Raw Carrot Rice” by washing, peeling & grating. Sprinkle desired seasonings on top (I used my favourite, Sonnentor – Gute Laune (laune gut, alles gut) Seasoning).
Using your chopping board, slice the whole Onion into fine small pieces and set aside.
Once Quinoa & Lentils are firmly cooked, add Coconut Oil to a frying pan, followed by Onions, Quinoa & Lentils. Allow to sizzle on low to medium heat. Now add Turmeric, Cumin Powder & Soy Sauce.
Stir all ingredients in the frying pan, for approximately 5 minutes, or until the Onions golden.
Remove from heat, and serve.
